Sweet Lime Tea
This sweet lime mixture is great for lots of uses, and I especially like to have it on hand to make tea at the change of season.
I’ll be sure to share other ways to use this tincture, but for today’s post, we are making the infusion, and I am sharing how I make tea with it.
Ingredients:
- Limes
- Ginger
- Honey
- Water
- Mason Jars with Lid
Instructions:
- Depending on how much you want to make depends on how many limes and ginger to use and how many mason jars you will need.
- Start by peeling the ginger. As I showed online, I like to use a spoon and a paring knife to get into the groves and keep the ginger’s shape.
- Wash and thinly slice your limes into rounds.
- Layer the ginger and lime into the jar, alternating them until it is complete, leaving ¼ inch head space.
- Make honey water in a one-to-one ratio. Depending on how much you plan to make, you will need to prepare a certain amount of “honey water.” For this batch, I used a cup and a half of honey to a cup and a half of hot water. To prepare the “honey water,” use a mason jar that holds double or more the amount of honey and water you are working with. This is hot and a bit tricky, as well as sticky, so be careful and possibly use hot pads or a towel.
- Boil some water. Pour your honey into a large mason jar and add some hot water. Put the lid and ring on tightly, shake, and mix well. Repeat this until you have added all the hot water and the honey is consistent with the water.
- Pour the “honey water” over the layered ginger and lime until the contents are covered completely.
- Place a lid and ring on the jars and let them rest in the refrigerator for at least a week to meld the infusion.
- How much honey water you use when making a tea will depend on your taste. I like my tea quite sour, so I add a squeeze of fresh lime to my cup along with two tablespoons of the “honey water.” I garnish it with a few pieces of ginger and a round or two of lime, then add boiling water and enjoy! (Be careful; it is hot!)
